Texas – Sid Miller marked the start of National Egg Month by recognizing Texas egg producers and encouraging residents to include eggs as part of a healthy, balanced diet centered on natural, unprocessed foods.
Miller described eggs as an affordable and versatile source of nutrition, noting their role as a staple in many households while also supporting farmers and ranchers across the state.
According to state data, Texas ranks fifth nationally in egg production, generating approximately 6.62 billion eggs each year. The broader poultry industry contributes more than $5 billion annually to the state’s economy, while egg production supports more than 1,200 direct jobs along with additional employment in related sectors such as feed, transportation, and retail.
Officials also pointed to the role eggs play in meeting dietary recommendations tied to the Make America Healthy Againinitiative, emphasizing their value as a protein-rich food that contains essential nutrients including choline and vitamins D, B12, and A.
The announcement comes after recent challenges within the industry, including outbreaks of Avian influenza that led to the loss of millions of laying hens and increased prices in 2024 and 2025. State officials said producers have since worked to rebuild flocks, improve biosecurity measures, and stabilize supply.
Miller credited efforts supported by Donald Trump and his agricultural policies for helping restore production and affordability, while also highlighting the resilience of Texas producers.
As part of National Egg Month, Miller encouraged Texans to support local agriculture by purchasing Texas-produced eggs and incorporating them into daily meals, from breakfast at home to school and community settings.
